Kale Chips – An Eye-Healthy Snack!

Rather than raid the pantry once again for a sugary snack, I took myself out into the vege garden and picked some kale to whip up oven baked Kale Chips. They’re easy, tasty, zero sugar and virtually zero fat (other than a smidgen of olive oil) and kale is one of the eye health superfoods. Kale is full of lutein & zeaxanthin – two very important compounds in keeping eyes healthy to avoid conditions such as cataracts and macular degeneration. Here’s my simple recipe:

  • 1 bunch of kale
  • Olive oil spray
  • Dried chilli flakes
  • Sea salt

Method:

Preheat your oven to 180C or 160C fan-forced. Remove the woody stems and cut the kale into bite-size pieces (about the size of a potato chip, we want them to look like chips!) and rinse the kale thoroughly in a salad spinner or colander and dry it off – important as the kale needs to be dry before cooking. Line a baking tray with baking paper, place the kale chips in a single layer on the paper and give them a very light spray with olive oil on both sides and sprinkle with a pinch of chilli flakes. Cook for 15 mins. When cooking has finished, remove them from the tray, pop them in a bowl and sprinkle with sea salt. Enjoy!
